Seven-Layer Magic Bars
Graham crust, chocolate and butterscotch chips, coconut and nuts bound with sweetened condensed milk. Layer order, even pouring and clean cutting.
Total time includes 2 hours of cooling (or 1 hour cooling plus 1 hour chilling) so the caramelized condensed milk firms up.
Before you start
Magic bars, also sold as seven-layer bars or Hello Dollies, are a pantry dessert: a buttery graham cracker base topped with chips, coconut and nuts, then soaked with sweetened condensed milk. In the oven the condensed milk bubbles down through the layers and caramelizes, gluing everything into a chewy, rich bar without any mixing.
The seven layers are butter, graham crumbs, condensed milk, chocolate chips, butterscotch chips, coconut and nuts. The order matters less than even coverage. Pour the condensed milk slowly across the whole surface so no corner is dry, and press the toppings down lightly so they bond. The bars must cool completely, ideally chilled, or they pull apart into sticky clumps when cut.
Ingredients
- 115 g (½ cup) unsalted butter — melted
- 150 g (1½ cups) graham cracker crumbs — about 10 full sheets
- 170 g (1 cup) semisweet chocolate chips
- 170 g (1 cup) butterscotch chips
- 100 g (1⅓ cups) sweetened shredded coconut
- 120 g (1 cup) walnuts or pecans — chopped
- 1 can (397 g / 14 oz) sweetened condensed milk
Method
- Heat the oven to 175°C (350°F). Line the pan with parchment, leaving an overhang on the long sides.
- Stir the melted butter into the graham crumbs until they look like wet sand. Press them evenly and firmly into the pan with the bottom of a measuring cup.
- Scatter the chocolate chips, then the butterscotch chips, then the coconut, then the nuts in even layers over the crust.
- Pour the condensed milk slowly in thin lines back and forth across the pan, covering the edges and corners as well as the center. Press the toppings down gently with your palm or a spatula.
- Bake for 25 to 30 minutes, until the coconut is golden at the edges and the condensed milk is bubbling around the sides and lightly browned.
- Cool in the pan on a rack for at least 2 hours, or 1 hour at room temperature and 1 hour in the refrigerator.
- Lift out the slab and cut into 24 bars with a sharp knife, wiping it with a damp cloth between cuts.
Tips for success
- Warm the can of condensed milk in a bowl of hot water for 5 minutes so it pours in a thin, even stream.
- Toast the nuts first for a deeper flavor; they barely brown under the condensed milk.
- Watch the last 5 minutes closely. Coconut goes from golden to scorched quickly.
Substitutions
- Graham cracker crumbs
- Crushed vanilla wafers, digestive biscuits or chocolate cookie crumbs all work at the same weight.
- Butterscotch chips
- Peanut butter or white chocolate chips swap in directly; each changes the flavor more than the texture.
- Walnuts or pecans
- Leave them out for a nut-free bar and add 50 g more coconut or crushed pretzels for texture.
Variations
- Salted pretzel magic bars
- Use crushed pretzels for half the graham crumbs and replace the nuts with broken pretzel pieces.
- Cherry almond bars
- Use sliced almonds and white chocolate chips and add 60 g chopped dried cherries.
Troubleshooting
- Bars fall apart when cut
- They were cut warm, or the condensed milk did not reach every area. Cool completely, chill, and pour the milk evenly to the edges.
- Crust is soggy or crumbly
- It was not pressed firmly enough or the butter was undermeasured. Press hard into a compact layer.
- Edges are hard and dark
- They overbaked, or a dark pan ran hot. Use a light metal pan and pull the bars once the edges are golden.
Storage
Store the cut bars in an airtight container at room temperature for up to 5 days, layered with parchment. Freeze for up to 3 months.
Safety notes
Contains milk, wheat and tree nuts; coconut and some chips are processed alongside other allergens, so check labels.
