1 loaf (23 x 13 cm / 9 x 5 in), about 10 slices

Includes about 90 minutes of cooling. The loaf can be eaten then, but wrapping it for 24 hours at room temperature gives the classic sticky top.

Before you start

This is gingerbread the British way: not a cookie, but a dense, dark loaf cake made by melting butter, sugar, molasses and golden syrup together, then stirring in flour, spices, milk and eggs. The high proportion of syrup keeps it moist, and after a day wrapped at room temperature the top turns tacky and the crumb becomes almost fudgy. That stickiness is the point.

Baking it in a moderate oven lets the heavy batter rise and set without a burnt crust. Molasses gives the deep color and bittersweet edge; golden syrup softens it with a buttery caramel sweetness. Ground ginger provides warmth, while a little freshly grated ginger adds a sharp, bright heat. Expect the top to sink slightly in the middle as it cools; that is normal for a loaf this rich.

Ingredients

  • Melted mixture115 g (½ cup) unsalted butter
  • 100 g (½ cup, packed) dark brown sugar
  • 170 g (½ cup) unsulfured molasses
  • 85 g (¼ cup) golden syrup — or light corn syrup
  • Dry220 g (1¾ cups, spooned and leveled) all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground allspice
  • ½ tsp fine salt
  • Wet180 ml (¾ cup) whole milk
  • 2 large eggs — beaten
  • 1 tbsp freshly grated ginger — optional, for extra heat
  • Optional50 g (⅓ cup) crystallized or stem ginger — finely chopped

Method

  1. Heat the oven to 160°C (325°F) with a rack in the center. Grease the pan and line it with parchment, leaving an overhang on the long sides.
  2. Put the butter, brown sugar, molasses and golden syrup in the saucepan over low heat. Stir until the butter melts and the sugar dissolves; do not let it boil. Remove from the heat and cool for 5 minutes.
  3. Whisk the flour, baking soda, ground ginger, cinnamon, allspice and salt in the large bowl.
  4. Whisk the milk into the warm syrup mixture, then the beaten eggs and fresh ginger if using. The mixture should feel only warm, not hot.
  5. Pour the liquid into the dry ingredients and whisk until smooth. The batter will be thin and runny, which is correct. Fold in the chopped crystallized ginger if using.
  6. Pour the batter into the pan. Bake for 55 to 65 minutes, until well risen, the top springs back when lightly pressed and a skewer in the center comes out with a few moist crumbs. The middle should read about 96°C (205°F).
  7. Cool completely in the pan on a rack, then lift out using the parchment. Wrap tightly in parchment and foil and leave at room temperature for 24 hours before slicing, if you can wait.

Tips for success

  • Grease your measuring cups or weigh the syrups straight into the saucepan on a scale; it is cleaner and more accurate.
  • Do not boil the syrup mixture. Boiling evaporates water and can make the finished loaf hard at the edges.
  • Cool it in the pan. The warm loaf is fragile and can crack or break if lifted out too soon.

Substitutions

Golden syrup
Light corn syrup or honey can stand in. Honey adds its own floral taste and browns faster, so check the loaf 5 minutes early.
Unsulfured molasses
British black treacle is a close match. Blackstrap molasses is too bitter used alone; replace no more than a quarter of the molasses with it.
Whole milk
Buttermilk gives a slightly lighter, tangier loaf. Oat milk works for a dairy-free version if you also use a plant-based butter.

Variations

Lemon-glazed gingerbread
Stir 100 g powdered sugar with 1½ tablespoons lemon juice and drizzle over the cooled loaf.
Orange and dark chocolate gingerbread
Add the zest of 1 orange to the melted mixture and fold 75 g chopped dark chocolate into the batter.

Troubleshooting

Loaf sank deeply in the center
Some dip is normal, but a crater means underbaking or too much soda. Bake until the center reaches 96°C (205°F) and level your spoons.
Hard, chewy crust
The syrup was boiled or the oven ran hot. Melt gently, bake at 160°C (325°F) and tent with foil after 40 minutes if the top darkens quickly.
Top is not sticky
It needs time wrapped. Keep the loaf airtight for a full day; the sugars draw moisture to the surface.

Storage

Keep the loaf wrapped airtight at room temperature for up to a week; it gets stickier and more flavorful for the first few days. Freeze well-wrapped for up to 3 months.

Safety notes

Raw batter contains egg and flour; do not taste it. Contains wheat, egg and milk.
